Encebollado

It is a soup made from fish (albacore), cassava, tomato, red onion and herbs along with ingredients such as celery, lemon, parsley, chili, coriander, pepper, cumin and garlic. It’s usually accompanied with bread, plantain chips or popcorn.

Fried fish with fried plantains

Or better known as its Spanish name ‘Pescado frito con patacones’. For its preparation, it is common to use a whole fish, but it can also be prepared using fish fillets of corvina, snapper, sawfish, tilapia, or others. It has garlic, cumin, salt, mustard, oil and a little flour to lightly bread the fish; and is served with rice, fried plantains, and salad.

Ceviche
